I totally love this, if you cannot find your answers here I doubt you will be able to find them. There is a lot of good information given along with some wonderful recipes. I really can't wait to get my dehydrator going to see how some of these recipes taste.
EVERYONE should have THIS BOOK!It is absolutely the BEST dehydrator book I have, and I have Mary Bell's, Ball Blue Book, and several others.Tammy Gangloff lays out dehydration in SIMPLE steps, LOGICAL sections, Brief yet to the point, with TIPS and insights which only come for experience. I have 3 Excalibur dehydrators and have been dehydrating for over a decade, and found LOTS of USEFUL, Easy to Grab info while dehydrating, and even new wonderful recipes (for example drying cucumbers and making refrigerator pickles, and several Salsa Mix recipes!) Tammy Gangloff really put her heart and soul into this dehydrating cookbook and it shows. You will LOVE this cookbook because it is 26 pages of information and 312 pages of recipes. She covers all kinds and types of fruits and vegetables that you can dehydrate. Some of which I never knew you could do. She also covers nuts, jerky (all types of meat), and fruit leather, (you know fruit roll ups and alike). She shows you how to make your own instant soup mixes, snacks, and trail mix and much, much more.There are three major forms of preserving food: freezing, canning, and dehydration. You can only pack so much in your freezer. If the power goes out you can lose your food when it thaws out. Canning, allows you to store your harvest for years but then you are left with the bulkiness and storage of the mason jars. Dehydration is the ultimate form of food preservation. You can dehydrate your food, vacuum seal it and store it for years. Because you eliminate the water content your dehydrated food becomes light in weight. Then all you have to do is add water to your food and it becomes rehydrated. You can store a year's supply of food in a small plastic tote that you can slip under your bed or store in your closet.If the power goes out all you have to do is add some of your dehydrated food to an existing meal to make it taste as if you are in a restaurant and not roughing it. While others are running to the store to snatch up what supplies they can find, you will be home enjoying what you already have. Here is a quote from Tammy Gangloff that really hits home for me, "If everyone kept a stocked pantry and practiced self-reliance this craziness wouldn't exist." What better way to help fill your pantry with dehydrated food that you made yourself. So if you have a garden with an abundance harvest or purchase a surplus foods from the Farmer's Market, don't forget to dehydrate.
I live in Florida and when Hurricane Irma threatened Florida this year, I went to buy canned goods the week before she hit. The stores were already out of canned goods even though we still had a week to go. But the stores still had ample supplies of Jerky of all kinds. I loaded up on everything I could. This got me to thinking, I never even thought about buying jerky but jerky can sit on the shelf just like canned goods can. The more I thought about it I decided to buy a dehydrator to make up my own jerky and be able to use more of my frozen food (in case we lose power). I really hate trying to cook all that food in my fridge before a storm, but what else can I do? I don't won't to lose any of it and it is better to cook it than it goes to waste. While I was looking here on Amazon for dehydrators, I seen this cookbook so I ordered it, too. I'm still waiting on my dehydrator but my book arrived today. Just glancing through this book I see a lot of things I never even thought of. For hurricanes we have a butane stove, camping lanterns, canisters to hold water, and battery operated fans in case the power goes out but never really put much thought in the food, except canned goods. Up until Hurricane Irma we never lost power during a hurricane before. And although that was only 10 minutes during the intense part of the storm, stores are not really restocked with food for about 2 weeks after a hurricane has come through. With this cookbook my family and I will truly be ready for next years Hurricane Season.
Based on the description and some of the reviews, I bought this book to help me get ready to hit the trail backpacking with healthy meals without all the processed stuff you get with processed backpacking food.PROS: Very comprehensive introductions and tips to a novice (me) dehydrator. There are a lot of good tips for achieving the right texture and taste for many foods. If you know your way around a kitchen and spices, you'll be able to add the right flare to whatever your taste is.CONS: Only 12 pages dedicated to camping/trail food. Based on reviews, I was under the impression this had a lot more for backpacking foods.
In my opinion, it's not worth it, over 50% of the book is the same page duplicated with a different heading for fruit / Vegetable. A one page chart would replace over 100 pages. It fell short of the hype. If it was a Nice chart with a recipe booklet would be more helpful for the new dehydrator owner. However, it was helpful to get me started and I do use it as a reference once in awhile. This book maybe more helpful to others.Pros: Guide for how to slice, Dehydro time, recipes, some do's & don'tsCons: Waste of pages with repeating information. Tells you to coat everything with Lemon juice or citric acid but leaves you hanging to figure it out on your own. So why do I buy this book?
